How To Make Moroccan Chicken Recipe

Preparation: 15 minutes
Cooking: 45 minutes
Total: 1 hour

Serves:

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional, for spice)
  • 1 cup chicken broth
  • 1 lemon, juiced
  • 1/4 cup green olives, pitted
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper, to taste

Instructions

  1. Season the chicken thighs with salt and pepper.

  2. Heat olive oil in a large skillet or Dutch oven over medium heat.

  3. Add the chicken thighs to the pan, skin side down, and cook until browned and crispy, about 5-7 minutes. Flip and brown the other side for another 5 minutes. Remove the chicken from the pan and set aside.

  4. In the same pan, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 2-3 minutes.

  5. Add the cumin, coriander, paprika, ginger, cinnamon, and cayenne pepper (if using). Stir well to coat the onions and garlic with the spices.

  6. Pour in the chicken broth and lemon juice. Bring the mixture to a simmer.

  7. Return the chicken thighs to the pan, skin side up. Cover and let simmer for 30-35 minutes, or until the chicken is cooked through and tender.

  8. Add the green olives and simmer for an additional 5 minutes.

  9. Serve the Moroccan chicken hot, garnished with fresh cilantro. Serve with couscous or rice, if desired.
