How To Make Moroccan Chicken Recipe
Serves:
Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (optional, for spice)
- 1 cup chicken broth
- 1 lemon, juiced
- 1/4 cup green olives, pitted
- 2 tablespoons fresh cilantro, chopped
- Salt and pepper, to taste
Instructions
-
Season the chicken thighs with salt and pepper.
-
Heat olive oil in a large skillet or Dutch oven over medium heat.
-
Add the chicken thighs to the pan, skin side down, and cook until browned and crispy, about 5-7 minutes. Flip and brown the other side for another 5 minutes. Remove the chicken from the pan and set aside.
-
In the same pan, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 2-3 minutes.
-
Add the cumin, coriander, paprika, ginger, cinnamon, and cayenne pepper (if using). Stir well to coat the onions and garlic with the spices.
-
Pour in the chicken broth and lemon juice. Bring the mixture to a simmer.
-
Return the chicken thighs to the pan, skin side up. Cover and let simmer for 30-35 minutes, or until the chicken is cooked through and tender.
-
Add the green olives and simmer for an additional 5 minutes.
-
Serve the Moroccan chicken hot, garnished with fresh cilantro. Serve with couscous or rice, if desired.
