Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 8 oz sliced mushrooms
  • 1/2 cup Marsala wine
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • Fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 375°F.

  2. Season the chicken breasts with salt and pepper, then dredge them in the flour.

  3. Heat the olive oil and butter in a cast iron skillet over medium-high heat.

  4. Brown the chicken on both sides until golden, then remove from the skillet and set aside.

  5. Add the mushrooms to the skillet and cook until tender.

  6. Pour the Marsala wine into the skillet and let it cook down for about 2 minutes.

  7. Add the chicken broth and heavy cream, and bring the sauce to a simmer.

  8. Return the chicken to the skillet and spoon the sauce over it.

  9. Bake the chicken in the oven for 10-15 minutes, until cooked through.

  10. Garnish with fresh parsley before serving.
