- 8 slices of bread
- 4 oz mozzarella cheese, sliced
- 4 eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 tbsp sugar
- 1/4 tsp cinnamon
- 1/4 tsp salt
- Butter for cooking
- Maple syrup and fresh berries for serving
Instructions

Lay out 4 slices of bread and place mozzarella slices on top. Cover with remaining bread slices to make sandwiches.

In a shallow bowl, whisk together eggs, milk, vanilla extract, sugar, cinnamon, and salt.

Dip each sandwich into the egg mixture, making sure all sides are coated.

Heat butter in a non-stick skillet over medium heat. Cook the sandwiches for 3-4 minutes per side, until golden brown and the cheese is melted.
