  • 8 slices of bread
  • 4 oz mozzarella cheese, sliced
  • 4 eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 tbsp sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • Butter for cooking
  • Maple syrup and fresh berries for serving

Instructions

  1. Lay out 4 slices of bread and place mozzarella slices on top. Cover with remaining bread slices to make sandwiches.

  2. In a shallow bowl, whisk together eggs, milk, vanilla extract, sugar, cinnamon, and salt.

  3. Dip each sandwich into the egg mixture, making sure all sides are coated.

  4. Heat butter in a non-stick skillet over medium heat. Cook the sandwiches for 3-4 minutes per side, until golden brown and the cheese is melted.

  5. Serve hot with maple syrup and fresh berries.
