Amazing Stuffed French Toast Recipe

This stuffed french toast recipe is perfect for that energy boost in the morning. It’s filled with cream cheese and pecans so you can bet this will be one filling breakfast.

Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup pineapple, crushed
  • 1/2 cup pecans, toasted, chopped
  • 16 oz French bread
  • 4 eggs, large
  • 1 cup whipping cream
  • 1/2 tsp vanilla extract
  • 1 tsp ground ginger
  • 12 oz apricot preserves
  • 1/2 cup orange juice

Instructions

  1. Beat cream cheese at medium speed with an electric mixer until light and fluffy. Stir in pineapples and pecans. 

  2. Cut bread into 12 slices, about 1.5" thick each. Cut a pocket through the top crust of each slice.

  3. Stuff each slice evenly with cream cheese mixture. 

  4. Combine eggs with whipping cream, vanilla extract, and ginger. Stir well with a wire whisk.

  5. Dip bread slices in egg mixture, coating all sides. 

  6. Cook on a lightly greased griddle over medium-high heat for 3 minutes on each side or until golden. 

  7. Combine preserves and orange juice in a saucepan. Cook over low heat, stirring constantly until melted.

  8. Serve with hot toast.
