How To Make Pancake Cannelloni

Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 eggs
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a mixing bowl, whisk together flour, milk, eggs, salt, black pepper, and garlic powder until smooth batter is formed.

  2. Heat a non-stick skillet over medium heat and pour a ladleful of the pancake batter onto the skillet. Swirl the batter to form a thin pancake.

  3. Cook for 2-3 minutes or until the pancake is golden brown, then flip and cook for another 2-3 minutes. Repeat with the remaining batter.

  4. In a separate bowl, mix together ricotta cheese, mozzarella cheese, and marinara sauce.

  5. Take a cooked pancake and spoon some of the cannelloni filling onto one end, then roll tightly. Place the pancake cannelloni in a baking dish.

  6. Repeat with the remaining pancakes and filling, arranging them in the baking dish.

  7. Sprinkle grated Parmesan cheese over the top.

  8. Bake in a preheated oven at 350°F (180°C) for 20 minutes or until the cheese is melted and bubbly.

  9. Serve hot and enjoy!
