- 2 tbsp honey
- 1 tsp vanilla extract
- 1/2 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
-
In a bowl, combine oats and milk. Let it sit for 5 minutes to soften.
-
In a separate bowl, whisk together eggs, honey, and vanilla extract. Add this mixture to the oats and milk.
-
In another bowl, mix together whole wheat flour, baking powder, cinnamon, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.
-
Heat a non-stick skillet or griddle over medium heat. Scoop about 1/4 cup of batter onto the skillet for each pancake.
-
Cook for 2-3 minutes, until bubbles form on the surface. Flip the pancake and cook for an additional 1-2 minutes, until golden brown.
-
Repeat with the remaining batter, adding more oil to the skillet as needed.
-
Serve the oatmeal pancakes warm with your favorite toppings such as fresh fruit, yogurt, or maple syrup.
