Serves:

Ingredients

  • 2 cups rolled oats
  • 2 cups almond milk (or any non-dairy milk of your choice)
  • 1 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup dried apricots, chopped
  • 1/4 cup sliced almonds

Instructions

  1. In a large bowl, combine the oats, almond milk, Greek yogurt, honey/maple syrup, and vanilla extract. Stir well to combine.

  2. Gently fold in the chopped apricots.

  3. Cover the bowl with plastic wrap or a lid and refrigerate overnight or for at least 4 hours.

  4. In the morning, give the oats a good stir and divide into 4 serving bowls.

  5. Top each serving with a sprinkle of sliced almonds.

  6. Enjoy!
