Ingredients
- 4 cup potatoes, diced
- ¼ cup onion, chopped
- 1 cup Canadian bacon, chopped , or ham
- ¼ cup chicken broth
- 2 tbsp. olive oil
- ¼ tsp. celery seed
- ½ tsp. freshly ground black pepper
- ¾ tsp. salt
Instructions

Place the potatoes into a medium saucepan, and cover with water.

Bring to a boil over high heat, then reduce the heat, and simmer for 5 minutes. Drain.
- Then, heat oil in a large skillet over medium heat.
- Cook the bacon for 4 minutes, then add in the onion and cook until translucent. Stir frequently.
- Add the potatoes, salt, celery seed, and pepper to the bacon; cook 4 minutes, stir occasionally.
- Lastly, stir in the chicken broth.
- Stir until liquid is absorbed into the potatoes.
