Ingredients

  • 1/2 lb breakfast sausage
  • 1 1/4 cup cornmeal
  • 1/2 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup honey
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup melted butter

Instructions

  1. Preheat oven to 375°F and grease a muffin tin.
  2. In a skillet, cook breakfast sausage until browned and crumbled.
  3. In a mixing bowl, combine cornmeal, flour, baking powder, salt, and black pepper.
  4. In a separate bowl, whisk together honey, milk, egg, and melted butter.
  5. Add wet ingredients to dry mixture and stir until combined.
  6. Gently fold in cooked sausage.
  7. Scoop batter into muffin tin, filling each cup about 3/4 of the way.
  8. Bake for 20-25 minutes, or until muffins are golden brown and a toothpick inserted in the center comes out clean.
  9. Serve warm and enjoy!
