How To Make Pumpkin Spice Breakfast Cookie Recipe

Ingredients
- 1 cup oat flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp allspice
- 1/4 tsp salt
- 1/2 cup pure pumpkin puree
- 1/4 cup maple syrup
- 1 egg
- 1 tsp vanilla extract
- 2 tbsp coconut oil, melted
- 1/4 cup chopped pecans
Instructions

Preheat oven to 350°F and line a baking sheet with parchment paper.

In a medium bowl, whisk together oat flour, baking powder, cinnamon, nutmeg, ginger, allspice, and salt.

In a separate bowl, mix together pumpkin puree, maple syrup, egg, vanilla extract, and melted coconut oil.

Add wet ingredients to dry ingredients and mix until well combined.

Stir in chopped pecans.

Use a cookie scoop or spoon to drop dough onto prepared baking sheet.

Bake for 12-15 minutes, or until edges are golden brown.
