How To Make Breakfast Chilaquiles

Breakfast bowls are really convenient because all you have to do is literally toss together the ingredients in a bowl, and you’ve got yourself a hearty breakfast. You might have already seen the trendy bowls of quinoa seeds with fruits and nuts around social media. But did you know that you can have savory renditions of this morning meal, too? Ingredients

  • 8 cups tortilla chips
  • 1 cup salsa
  • 4 eggs
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 350°F (180°C).

  2. In a large skillet, heat the salsa over medium heat until simmering.

  3. Add the tortilla chips to the skillet and toss to coat them in the salsa. Cook for 2-3 minutes, until the chips are slightly softened.

  4. Make four wells in the chips-salsa mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, until the eggs are cooked to your preference.

  5. Sprinkle shredded cheese over the chilaquiles and transfer the skillet to the preheated oven. Bake for 5 minutes, until the cheese is melted and bubbly.

  6. Remove from the oven and top with sliced avocado and chopped cilantro.

  7. Serve hot and enjoy!
