Preparation: 15 minutes
Cooking: 1 hour
Total: 1 hour 15 minutes

Serves:

Ingredients

  • 2 ½ cups whole wheat flour
  • 1 ½ cups malted barley flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 ¾ cups buttermilk
  • 2 tbsp honey

Instructions

  1. Preheat the oven to 375°F (190°C). Grease and flour a round cake pan.

  2. In a large bowl, whisk together the whole wheat flour, malted barley flour, baking soda, and salt.

  3. Make a well in the center of the dry ingredients and pour in the buttermilk and honey. Stir until just combined.

  4. Turn the dough out onto a lightly floured surface and knead for 1-2 minutes, until it comes together and is no longer sticky.

  5. Shape the dough into a round loaf and place it in the prepared cake pan. Score a deep cross on the top of the loaf.

  6. Bake for 45-50 minutes, or until the bread sounds hollow when tapped on the bottom.

  7. Remove from the oven and let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before slicing.
