Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup fresh cranberries
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°F. Grease a 9×5 inch loaf pan.

  2. In a medium bowl whisk together flour, baking soda, and salt.

  3. In a large bowl cream butter and sugar until light and fluffy.

  4. Beat in eggs one at a time. Stir in vanilla extract.

  5. Gradually add the flour mixture to butter mixture, alternating with buttermilk, until fully combined.

  6. Fold in cranberries and pecans.
