Ingredients

  • 1 cup yellow cornmeal
  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup honey
  • 1 cup unsweetened almond milk
  • 2 eggs
  • 1/4 cup melted coconut oil

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, mix together the cornmeal, flour, baking powder, and salt.

  3. In a separate bowl, whisk together the honey, almond milk, eggs, and melted coconut oil.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Grease a 9-inch square baking dish and pour in the batter.

  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the cornbread to cool slightly before cutting into squares.
