  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs

Instructions

  1. Preheat the oven to 425°F (220°C). Place a 10-inch cast iron skillet in the oven while it preheats.

  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together the buttermilk, melted butter, and eggs.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Carefully remove the hot cast iron skillet from the oven. Pour the batter into the skillet and smooth the top.

  6. Bake for 20-25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.

  7. Allow the cornbread to cool for a few minutes before slicing and serving.
