Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 400°F.

  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.

  3. In another bowl, whisk together the milk, eggs, and melted butter.

  4. Pour the wet ingredients into the dry ingredients and stir together until just combined.

  5. Grease a 9-inch cast-iron skillet or baking dish with cooking spray.

  6. Pour the batter into the skillet/dish, smooth out the top, and bake for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.

  7. Allow the cornbread to cool for a few minutes before slicing and serving.
