Ingredients

  • 2 large eggplants
  • 2 tablespoons tahini
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Sesame seeds, for garnish
  • Crackers, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the eggplants on a baking sheet and roast for 30 minutes, or until the skin is charred and the flesh is soft.

  3. Remove the eggplants from the oven and let them cool. Once cooled, peel off the skin and discard.

  4. In a food processor, blend the eggplant flesh, tahini, garlic, lemon juice, salt, and pepper until smooth.

  5. Transfer the dip to a serving bowl and drizzle with olive oil. Sprinkle with sesame seeds for garnish.

  6. Serve the baba ganoush with sesame crackers on the side.
