Ingredients

  • 1 cup cornmeal
  • 1 cup boiling water
  • 1/4 cup molasses
  • 2 tbsp butter
  • 2 tsp active dry yeast
  • 1 tsp salt
  • 2 1/2 cups all-purpose flour

Instructions

  1. In a large bowl, combine the cornmeal and boiling water. Let it cool for 10 minutes.

  2. Stir in the molasses, butter, yeast, and salt. Gradually add in the flour, mixing well after each addition.

  3. Knead the dough on a lightly floured surface for about 10 minutes, until smooth and elastic.

  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

  5. Preheat the oven to 375°F (190°C). Punch down the dough and shape it into a loaf. Place it in a greased bread pan.

  6. Cover the loaf with a damp cloth and let it rise for another 30 minutes.

  7. Bake in the preheated oven for 35-40 minutes, or until golden brown and hollow-sounding when tapped on the bottom.

  8. Remove from the oven and let the bread cool on a wire rack before slicing.
