  • 4 veal chops
  • 1 tbsp fresh sage, chopped
  • Salt and pepper, to taste
  • 1 medium butternut squash, peeled and diced
  • 1 cup polenta
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the veal chops with salt, pepper, and chopped sage.

  3. Heat a large oven-safe skillet over medium-high heat and sear the veal chops for 2-3 minutes on each side.

  4. Transfer the skillet to the preheated oven and cook for an additional 10-12 minutes, or until the veal is cooked to your desired doneness.

  5. Meanwhile, in a large saucepan, bring the chicken broth and milk to a boil.

  6. Add the diced butternut squash and simmer for about 15 minutes, or until tender.

  7. In a separate saucepan, cook the polenta according to package instructions.

  9. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
