Ingredients

  • 500g ground beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 can (400g) diced tomatoes
  • 1 cup beef broth
  • 2 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large skillet, brown the ground beef over medium heat until cooked through. Remove excess fat.

  3. Add onions, carrots, garlic, and bell pepper to the skillet. Cook for 5 minutes until vegetables are tender.

  4. Stir in chili powder, cumin, and paprika. Cook for an additional 2 minutes.

  5. Add diced tomatoes and beef broth. Bring to a simmer and let it cook for 15 minutes.

  6. Season with salt and pepper to taste.

  7. Transfer the beef mixture into a baking dish and spread mashed potatoes evenly on top.

  8. Sprinkle shredded cheddar cheese on top of the mashed potatoes.

  9. Bake in the preheated oven for 20-25 minutes until the cheese is melted and golden.

  10. Garnish with fresh parsley before serving.
