Ingredients

  • 4 large eggs
  • 200g smoked salmon, finely chopped
  • 1/2 onion, finely diced
  • 2 tbsp fresh dill, chopped
  • 1 tbsp Dijon mustard
  • 1/4 cup breadcrumbs
  • Salt and pepper, to taste
  • Vegetable oil, for frying

Instructions

  1. Preheat your oven to 180°C (350°F).

  2. Place the eggs in a saucepan with cold water. Bring to a boil and let them cook for 6 minutes. After cooking, transfer them to a bowl of ice water to cool completely.

  3. In a mixing bowl, combine the smoked salmon, onion, dill, Dijon mustard, breadcrumbs, salt, and pepper. Mix well until all the ingredients are fully incorporated.

  4. Peel the eggs and coat each one with a thin layer of the salmon mixture, making sure they are completely covered.

  5. Heat vegetable oil in a deep frying pan over medium heat. Fry the eggs for about 2 minutes until golden brown on all sides.

  6. Transfer the fried eggs to a baking sheet and bake in the preheated oven for 5 minutes to ensure they are cooked through.

  7. Remove from the oven and let them cool slightly before serving. Cut in half and enjoy!
