How To Make Roast Chicken with Garlic and Herbs

Ingredients
- 1 whole chicken (about 3-4 lbs)
- 8 cloves of garlic, minced
- 2 sprigs of rosemary, chopped
- 2 sprigs of thyme, chopped
- 4 tbsp of olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper.

Pat the chicken dry with paper towels and place it on a roasting pan.

Rub the garlic and herb mixture all over the chicken, making sure to get it under the skin as well.

Roast the chicken in the preheated oven for about 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C) when tested with a meat thermometer.

Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
