Ingredients

  • 1 whole chicken (about 4 pounds)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 onion, quartered
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 cup chicken broth
  • Fresh herbs for garnish (optional)

Instructions

  1. Remove the giblets from the chicken and pat it dry with paper towels.

  2. Rub the chicken with olive oil, salt, black pepper, garlic powder, and paprika.

  3. Place the quartered onion, carrots, and celery in the bottom of the slow cooker.

  4. Pour the chicken broth over the vegetables.

  5. Place the seasoned chicken on top of the vegetables.

  6. Cover the slow cooker and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until the chicken is cooked through and tender.

  7. Remove the chicken from the slow cooker and let it rest for a few minutes before carving.

  8. Serve the roast chicken with the cooked vegetables and garnish with fresh herbs, if desired.
