Ingredients

  • 3 lbs corned beef brisket
  • 4 cups water
  • 1 head cabbage, cut into wedges
  • 8 small red potatoes
  • 4 large carrots, peeled and cut into chunks
  • 1 onion, peeled and quartered
  • 2 cloves garlic, minced
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, place the corned beef brisket and cover with water. Bring to a boil and simmer for 2 hours.

  2. After 2 hours, add the potatoes, carrots, onion, garlic, and bay leaf to the pot. Simmer for another hour or until the vegetables are tender.

  3. Add the cabbage wedges to the pot and cook for an additional 15 minutes or until the cabbage is tender.

  4. Remove the corned beef from the pot and let it rest for a few minutes before slicing.

  5. Serve the sliced corned beef with the boiled vegetables and a ladleful of the cooking liquid.

  6. Season with salt and pepper to taste.
