Ingredients

  • 6 eggs
  • 1/4 cup crumbled feta cheese
  • 1/2 cup roasted red and yellow peppers, diced
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, whisk the eggs. Add the feta cheese, roasted peppers, parsley, salt, and pepper. Mix well.

  2. Heat olive oil in a non-stick skillet over medium heat. Pour the egg mixture into the skillet.

  3. Cook for about 5 minutes, or until the edges start to set. Gently lift the edges with a spatula to let the uncooked egg flow to the bottom.

  4. Reduce heat to low and cover the skillet. Cook for another 5-7 minutes, or until the center is set.

  5. Remove from heat and let it cool for a few minutes. Cut into wedges and serve.
