Ingredients

  • 4 large tortillas
  • 1 cup cooked quinoa
  • 1 can chickpeas, drained and rinsed
  • 1 cup hummus
  • 2 cups mixed greens
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, sliced
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Warm the tortillas in a large skillet over medium-high heat.

  2. In a bowl, combine the quinoa, chickpeas, mixed greens, feta cheese, red onion, kalamata olives, sun-dried tomatoes, lemon juice, salt, and pepper.

  3. Spread hummus evenly on each tortilla.

  4. Divide the quinoa mixture evenly among the four tortillas.

  5. Roll each tortilla tightly and cut diagonally.
