Ingredients

  • 4 slices of crusty bread
  • 1 pint of cherry tomatoes
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 cup fresh mint leaves
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • 1 clove of garlic
  • Juice of 1/2 lemon
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Toss the cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper.

  3. Place the tomatoes on a baking sheet and roast for 20-25 minutes, until they are soft and slightly caramelized.

  4. In the meantime, prepare the mint pesto.

  5. In a food processor, combine the mint leaves, pine nuts, Parmesan cheese, garlic, lemon juice, and remaining tablespoon of olive oil.

  6. Pulse until the ingredients are well combined and forms a smooth paste.

  7. Toast the slices of bread until they are golden brown.

  8. Spread a generous amount of the mint pesto on each slice of bread.

  9. Top with the roasted tomatoes.

  10. Serve the tartines immediately.
