How To Make Tartines with Roasted Tomatoes & Mint Pesto

Ingredients
- 4 slices of crusty bread
- 1 pint of cherry tomatoes
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 cup fresh mint leaves
- 1/4 cup pine nuts
- 1/4 cup grated Parmesan cheese
- 1 clove of garlic
- Juice of 1/2 lemon
- 1/4 cup olive oil
Instructions

Preheat the oven to 400°F (200°C).

Toss the cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper.

Place the tomatoes on a baking sheet and roast for 20-25 minutes, until they are soft and slightly caramelized.

In the meantime, prepare the mint pesto.

In a food processor, combine the mint leaves, pine nuts, Parmesan cheese, garlic, lemon juice, and remaining tablespoon of olive oil.

Pulse until the ingredients are well combined and forms a smooth paste.

Toast the slices of bread until they are golden brown.

Spread a generous amount of the mint pesto on each slice of bread.

Top with the roasted tomatoes.

Serve the tartines immediately.
