Ingredients

  • 8 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese
  • 1/4 cup diced bell pepper
  • 1/4 cup diced onion
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped fresh spinach

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.

  2. In a bowl, whisk together eggs, salt, pepper, and Parmesan cheese.

  3. Divide the diced bell pepper, onion, tomatoes, and spinach evenly among the muffin cups.

  4. Pour the egg mixture over the vegetables, filling each cup about 3/4 full.

  5. Bake for 15 minutes or until the eggs are set and golden on top.

  6. Remove from the oven and let cool for a few minutes before removing the nests from the muffin tin.

  7. Serve warm.
