How To Make Baba Ganoush

Ingredients
- 2 large eggplants
- 1/4 cup tahini
- 2 cloves garlic, minced
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1/2 teaspoon cumin
- Salt to taste
- Fresh parsley, for garnish
- Pita bread, for serving
Instructions

Preheat the oven to 425°F (220°C). Pierce the eggplants with a fork and place them on a baking sheet. Roast in the oven for 30-40 minutes or until the eggplants are soft and the skin is charred.

Remove the eggplants from the oven and let them cool. Once cooled, peel off the skin and discard it.

In a blender or food processor, combine the roasted eggplants, tahini, minced garlic, lemon juice, olive oil, cumin, and salt. Blend until smooth and creamy.

Taste and adjust the seasoning if needed. If the dip is too thick, add a bit of water or more lemon juice to thin it out.

Transfer the Baba Ganoush to a serving dish and garnish with fresh parsley. Serve with warm pita bread.
