Venison Sausage & Chestnut Casserole Recipe

How To Make Venison Sausage & Chestnut Casserole

Ingredients

  • 1 lb venison sausage links
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup chestnuts, peeled and quartered
  • 2 cups beef or venison broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large skillet, brown the venison sausage links over medium heat. Remove from skillet and set aside.

  3. In the same skillet, sauté the onion and garlic until softened and fragrant.

  4. Add the mushrooms and cook until they release their moisture and start to brown.

  5. Stir in the chestnuts, broth, red wine, tomato paste, and Worcestershire sauce. Season with salt and pepper.

  6. Bring the mixture to a simmer and return the venison sausage links to the skillet.

  7. Transfer the skillet to the oven and bake for 1 hour, or until the sausage is cooked through and the flavors have melded together.

  8. Garnish with fresh thyme before serving.
