Ingredients

  • 1 pound of mixed bell peppers (red, yellow, and green), sliced
  • 1 cup white vinegar
  • 1 cup water
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 2 cloves garlic, minced
  • 1 teaspoon black peppercorns
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. In a medium saucepan, combine the white vinegar, water, sugar, salt, garlic, black peppercorns, and red pepper flakes (if using). Bring to a simmer over medium heat.

  2. Add the sliced peppers to the simmering liquid and cook for 5 minutes, until slightly softened.

  3. Remove the pan from heat and let the mixture cool to room temperature.

  4. Transfer the pickled peppers and liquid to a jar or container with a tight-fitting lid. Make sure the peppers are completely submerged in the liquid.

  5. Refrigerate for at least 24 hours before serving to allow the flavors to develop.

  6. Serve the pickled peppers as a side or use them to add flavor to sandwiches, salads, or other dishes.
