  • 2 cloves garlic

  • 1/4 cup extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Place sun-dried tomatoes, pine nuts, garlic, Parmesan cheese, salt, black pepper, and crushed red pepper flakes (if using) in a food processor or blender.

  2. Pulse until well combined, scraping down the sides as needed.

  3. Slowly drizzle in the olive oil while the food processor/blender is running until mixture is smooth and well blended.

  4. Taste and adjust seasoning if necessary.

  5. Transfer the sun-dried tomato pesto to a jar and refrigerate until ready to use.
