Ingredients

  • 250g spaghetti
  • 1/2 cup sun-dried tomatoes
  • 1/4 cup pine nuts
  • 2 cloves of garlic
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves
  • 1/4 cup olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.

  2. In a blender or food processor, combine the sun-dried tomatoes, pine nuts, garlic, Parmesan cheese, and basil leaves. Blend until well combined.

  3. Slowly add the olive oil while continuing to blend until the desired consistency is reached.

  4. Season with salt and black pepper to taste.

  5. In a large skillet, heat the red pesto sauce over medium heat for 2-3 minutes.

  6. Add the cooked spaghetti to the skillet and toss to coat the pasta with the sauce.

  7. Cook for an additional 2-3 minutes until heated through.

  8. Serve hot and garnish with extra Parmesan cheese and basil leaves if desired.
