This delicious and flavorful pasta dish mixes the sweetness of red bell peppers with the freshness of basil.

Ingredients

  • 1 pound fusilli pasta
  • 2 red bell peppers, roasted and sliced
  • 1/2 cup fresh basil leaves, packed
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 1/4 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Cook the pasta in a large pot of boiling salted water, according to the package instructions, until al dente.

  2. Drain the pasta and transfer it to a large bowl.

  3. In a food processor, combine the roasted red bell peppers, basil, Parmesan, pine nuts, olive oil, garlic, salt, and pepper, and process until smooth.

  4. Toss the pasta with the red bell pepper pesto until well coated.

  5. Serve immediately.
