How To Make Flax Seed Pudding

A healthy and delicious pudding made with flax seeds and coconut milk.

Ingredients

  • 1 cup flax seeds
  • 2 cups coconut milk
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Sliced fruit, nuts or granola for topping

Instructions

  1. In a large saucepan, combine the flax seeds, coconut milk, honey, vanilla extract and salt.

  2. Cook over medium heat, stirring constantly, for about 10-15 minutes until the mixture thickens and becomes pudding-like.

  3. Remove from heat and let cool to room temperature.

  4. Serve with sliced fruit, nuts or granola on top.
