How To Make Quinoa and Vegetable Stuffing Recipe
A delicious and healthy stuffing made with quinoa and vegetables perfect for any meal.

Ingredients
- 1 cup quinoa, rinsed and drained
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 tsp dried thyme
- salt and pepper, to taste
- 1/4 cup chopped fresh parsley
Instructions

In a medium pot, bring the quinoa and vegetable broth to a boil. Reduce heat, cover, and simmer for 15-20 minutes or until the quinoa is cooked through.

Heat the olive oil in a large pan over medium heat. Add the onion and garlic and sauté for 3-4 minutes.

Add the bell pepper, zucchini, mushrooms, thyme, salt, and pepper, and sauté for 6-8 minutes or until the vegetables are tender.

Add the cooked quinoa to the pan with the vegetables and stir to combine. Cook for an additional 2-3 minutes, or until everything is heated through.

Stir in the chopped parsley and serve.
