How To Make Quinoa and Vegetable Stuffing Recipe

Ingredients

  • 1 cup quinoa, rinsed and drained
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 tsp dried thyme
  • salt and pepper, to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a medium pot, bring the quinoa and vegetable broth to a boil. Reduce heat, cover, and simmer for 15-20 minutes or until the quinoa is cooked through.

  2. Heat the olive oil in a large pan over medium heat. Add the onion and garlic and sauté for 3-4 minutes.

  3. Add the bell pepper, zucchini, mushrooms, thyme, salt, and pepper, and sauté for 6-8 minutes or until the vegetables are tender.

  4. Add the cooked quinoa to the pan with the vegetables and stir to combine. Cook for an additional 2-3 minutes, or until everything is heated through.

  5. Stir in the chopped parsley and serve.
