Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp poppy seeds
  • 2 eggs
  • 1/4 cup vegetable oil
  • 3/4 cup milk
  • 1/3 cup fresh lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat oven to 350°F. Grease a 9×5-inch loaf pan.

  2. In a large mixing bowl, combine flour, sugar, baking powder, salt, and poppy seeds.

  3. In a separate bowl, beat eggs. Add oil, milk, lemon juice, and lemon zest. Whisk together.

  4. Pour wet ingredients into dry ingredients and mix until just combined.

  5. Pour batter into prepared loaf pan.

  6. Bake for 35 minutes, or until a toothpick inserted into the center of the bread comes out clean.

  7. Allow bread to cool for 10 minutes before slicing and serving.
