Ingredients

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup unsweetened shredded coconut
  • 1 large egg
  • 1/2 cup canned coconut milk
  • Zest of 1 lime

Instructions

  1. Preheat oven to 375°F. Grease a 9-inch loaf pan.

  2. In a medium bowl, whisk together flour, baking powder and salt.

  3. In a large bowl, mix together sugar, melted butter and shredded coconut.

  4. Add egg to the large bowl and mix until well combined.

  5. Add canned coconut milk and lime zest to the large bowl and mix again.

  6. Gradually add the dry ingredients to the large bowl, mixing until just combined.

  7. Pour batter into the prepared loaf pan and sprinkle with more shredded coconut.

  8. Bake for 25-30 minutes, or until a toothpick comes out clean.

  9. Let the bread cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
