Ingredients

  • 1 cup of vegan chocolate chips
  • 1 can of chilled full-fat coconut milk
  • 1 tbsp of maple syrup
  • 1 tsp of vanilla extract
  • pinch of salt

Instructions

  1. Place chocolate chips in a heatproof bowl over simmering water, stir until melted.

  2. Remove from heat, let it cool for a few minutes.

  3. In a mixing bowl, scoop the thick cream from the top of the can of coconut milk.

  4. Whip the coconut cream with a hand mixer until fluffy.

  5. Add maple syrup, vanilla extract, and salt, whisk it together for a few seconds.

  6. Pour the melted chocolate into the mixing bowl, mix until it is fully combined.

  7. Divide the mousse into 4 serving glasses.

  8. Chill the mousse in the refrigerator for at least 2 hours.

  9. Serve chilled, topped with vegan whipped cream and fresh berries.
