Ingredients

  • 4 ears of corn, husks removed
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup cotija cheese
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1 lime, juiced
  • Salt, to taste
  • Fresh cilantro, chopped (optional)

Instructions

  1. Preheat grill to medium-high heat.

  2. Grill corn for 10-15 minutes, rotating every few minutes, until charred on all sides.

  3. In a bowl, whisk together mayonnaise, sour cream, cotija cheese, smoked paprika, chili powder, lime juice, and salt.

  4. Brush sauce onto cooked corn, coating evenly.

  5. Sprinkle with more cotija cheese and fresh cilantro, if desired.
