Ingredients

  • 4 ears of corn, husks removed
  • 2 tbsp mayonnaise
  • 1 tbsp sour cream
  • 1 tbsp lime juice
  • 1/4 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium heat.

  2. Place the corn onto the grill and cook for about 10-12 minutes, rotating occasionally, until charred and tender.

  3. Allow the corn to cool slightly, then use a sharp knife to cut the kernels off the cobs.

  4. In a large bowl, combine the mayonnaise, sour cream, lime juice, cotija cheese, cilantro, chili powder, cayenne pepper, salt, and pepper.

  5. Add the corn kernels to the bowl and mix until all the ingredients are well combined.

  6. Serve the corn salad in individual bowls or on a platter. Garnish with extra cotija cheese and cilantro, if desired.
