How To Make Mexican Street Corn

Ingredients

  • 4 ears of corn, husked
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup grated Cotija cheese
  • 1 teaspoon chili powder
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Preheat grill to medium-high heat.

  2. Grill the corn, turning occasionally, until nicely charred (about 10-12 minutes).

  3. In a small bowl, mix together the mayonnaise, sour cream, half of the Cotija cheese, and half of the chili powder.

  4. Using a brush or spoon, generously coat each ear of corn with the sauce.

  5. Sprinkle the remaining Cotija cheese, chili powder, and cilantro over the corn.

  6. Serve with lime wedges for squeezing over the corn.
