How To Make Ham Hock & Lentils

Ingredients
- 1 ham hock
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 1 cup dried lentils
- 4 cups chicken broth
- 1 bay leaf
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions

In a large pot, boil the ham hock in water for 10 minutes to remove excess salt. Drain and set aside.

In the same pot, sauté the onion, carrots, celery, and garlic over medium heat until they start to soften.

Add the ham hock back to the pot along with the lentils, chicken broth, bay leaf, thyme, salt, and pepper.

Bring the mixture to a boil, then reduce heat to low and simmer for 1.5 to 2 hours until the lentils are tender and the ham hock is falling off the bone.

Remove the ham hock from the pot and shred the meat, discarding the bone and fat.

Return the shredded ham hock back to the pot and stir well to combine. Cook for an additional 5 minutes to heat through.

Serve the ham hock and lentils hot with crusty bread or over rice.
