How To Make Chorizo & Kale Hash with a Fried Egg

Serves:

Ingredients

  • 4 large eggs
  • 4 oz chorizo, sliced
  • 3 cups kale leaves, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chorizo and cook until lightly browned, about 3-4 minutes.

  2. Add onion and garlic to the skillet and sauté until they begin to soften, about 2 minutes.

  3. Add kale, smoked paprika, cumin, salt, and pepper to the skillet. Cook for 3-4 minutes, or until kale wilts and becomes tender.

  4. Make four wells in the kale mixture and crack an egg into each well. Season the eggs with salt and pepper.

  5. Reduce heat to medium-low and cover the skillet. Cook for 5-7 minutes, or until the eggs are cooked to your liking.

  6. Serve the hash with a fried egg on top. Enjoy!
