Ingredients

  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 tbsp curry powder
  • 1/2 cup sate sauce
  • 1 cup diced chicken or tofu
  • 1 cup mixed vegetables (carrots, bell peppers, snow peas)
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1/4 cup chopped peanuts
  • Fresh cilantro, for garnish

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.

  2. Heat the vegetable oil in a large skillet or wok over medium heat. Add the onion and garlic and cook until softened.

  3. Stir in the curry powder and sate sauce, then add the chicken or tofu. Cook until the chicken is cooked through or the tofu is heated.

  4. Add the mixed vegetables and cook for another 2 minutes, until they are tender-crisp.

  5. Stir in the cooked rice noodles, soy sauce, and lime juice. Cook for another 2-3 minutes, until everything is heated through.

  6. Serve the noodles topped with chopped peanuts and fresh cilantro.
