How To Make Rhubarb Popsicles
Refreshing popsicles perfect for a hot day with a tangy rhubarb flavor.

Ingredients
- 2 cups chopped rhubarb
- 1/2 cup water
- 1/2 cup sugar
- 1/2 cup fresh orange juice
- 1/2 tsp vanilla extract
Instructions

In a saucepan, combine the rhubarb, water, and sugar. Cook over medium heat until the rhubarb is very tender, about 15-20 minutes.

Remove from heat and let cool slightly. Use an immersion blender or transfer to a blender and blend until smooth.

Stir in orange juice and vanilla extract.

Pour mixture into popsicle molds and freeze for at least 4 hours, or until solid.

To release popsicles from molds, run them under warm water for a few seconds.
