Serves:

Ingredients

  • 2 large marrow (approximately 500g), peeled, seeded, and cubed
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat some oil over medium heat. Add the diced onion and minced garlic. Cook until fragrant and golden.

  2. Add the diced marrow, carrots, and celery to the pot. Stir and cook for 5 minutes to soften the vegetables.

  3. Pour in the vegetable or chicken broth and add the dried thyme. Season with salt and pepper to taste.

  4. Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes or until the marrow and vegetables are tender.

  5. Use an immersion blender or transfer the soup to a blender in batches to puree until smooth and creamy.

  6. Return the soup to the pot and heat it gently if necessary. Adjust the seasoning if needed.

  7. Serve the marrow soup hot, garnished with fresh parsley.
