Ingredients

  • 4 cups of fresh corn kernels
  • 2 serrano peppers, seeded and chopped
  • 1 red bell pepper, chopped
  • 1/4 cup of chopped cilantro
  • 1/4 cup of lime juice
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. In a skillet, char the corn kernels over high heat.

  2. In a bowl, mix together the serrano peppers, red bell peppers, cilantro, lime juice, and olive oil.

  3. Add the charred corn kernels to the bowl and toss to coat.

  4. Season with salt and pepper to taste.

  5. Serve chilled.
