Ingredients

  • 1 head of cauliflower, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until softened.

  2. Add the cauliflower and vegetable broth to the pot. Bring to a boil and let simmer until the cauliflower is tender, about 15 minutes.

  3. Use an immersion blender or transfer the soup to a blender to puree until smooth.

  4. Stir in the heavy cream and season with salt and pepper to taste. Heat the soup until warmed through.

  5. Serve hot, garnished with fresh parsley.
