Serves:
Ingredients
- 1 large cauliflower, cut into florets
- 1 onion, diced
- 2 cloves of garlic, minced
- 3 cups vegetable broth
- 1 cup milk
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
-
In a large pot, heat some oil over medium heat. Add the onion and garlic, and sauté until they are soft and fragrant.
-
Add the cauliflower florets to the pot, and then pour in the vegetable broth. Bring the mixture to a boil and then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, or until the cauliflower is tender.

Using an immersion blender, blend the soup until it is smooth and creamy. Alternatively, you can transfer the mixture to a blender and blend in batches.
-
Return the soup to the pot and stir in the milk. Season with salt and pepper to taste. Heat the soup over low heat until it is heated through.
-
Serve the cauliflower soup hot, garnished with chopped parsley if desired.
